I’ve been watching a lot of Nigella’s cookery shows on tv recently and there are SO many of her recipes that I am just dying to try but never really have the time (not to mention the fact that if I did, I would be the size of a house!) but there was one recipe that really jumped out at me – her peanut butter and sesame noodles!
The great thing about this recipe is that it can be eaten hot or cold and is great for a packed lunch too.
You will need:
egg noodles (I used pre cooked and just heated them)
bean sprouts
Pepper (any colour)
Spring onion
Sesame seeds
Sesame oil
Lime juice
Soy sauce
Peanut butter
Sweet chilli sauce
Method:
1. Put 1 tablespoon of sesame oil, 1 tablespoon of soy sauce, 2 tablespoons sweet chilli sauce, 2 tablespoons lime juice and a hefty serving (about 100g) peanut butter in a bowl and mix.
2. Put the beansprouts, red pepper, sliced spring onions and the noodles into a bowl.
Pour the dressing over them and mix thoroughly to coat everything well.
3. Sprinkle with the sesame seeds and serve.
(Quantities of noodles, bean sprouts, onion and pepper can vary according to preference)
